By sourcing exclusively from these farms, SNAP (a licensed coffee exporter based in Addis Ababa who runs or works in partnership with three coffee washing and processing stations such as the Raro Boda station) is able to create new opportunities for smallholder farmers whose coffee might not have been marketable as specialty coffee. Giving farmers access to state of the art processing through their washing stations creates value for farmers while building consistency and quality

By Robert Cabrera Region: Alto Naranjal, Buesaco, Nariño, Country: Colombia Altitude: 1850 MASL Varieties: Colombia and Castillo Process: Honey Processed & Patio Dried Robert Cabrera is a fourth-generation coffee producer and purchased his 1-hectare farm, San Alejo, in 2007. He uses the honey process in order to minimize the impact of his coffee on the environment, as well as to offer a differentiated product. Robert’s coffee comes to us through the exporter Fairfield Trading. Fairfield’s founder, Alejandro Renjifo, has held positions as a coffee economist at the International Coffee Organization (ICO) and the Federación Nacional de Cafeteros de Colombia (FNC). Alejandro was responsible for launching the FNC’s specialty division in North America, promoting the diversity of Colombia terroir. In order to be purchased for Fairfield’s single-origin program, coffee must have a moisture content of 10%-11%, a yield factor of <90, and a minimum cup score of 86 points. Fairfield rejects 40% of coffees that meet criteria 1 and 2, as they score below 86 points

Tolima is the third-largest coffee-producing region in Colombia. Tolima is known for its difficult, mountainous terrain, and until recently farmers in this area were caught between FARC guerrillas, the government, narco-traffickers, and paramilitary groups. Carlos’ coffee took second place in the regional competition, Ibagué: Origen de Cafés Especiales, out of 72 entrants from across Tolima. The quality in this standout coffee was evident from the first sip when cupping against other samples from Nariño, Huila, and Tolima
